Howdy! My name is Caroline and I am the original "Freeway Foodie"! I travel in my 5th wheel/truck combination with my 2 kitty cats named "Minnie Marshmallow", "Tulsi Tea" and my doggy named "Cori Corgi". We are full-time RVers who travel the USA seeking out really awesome places like farm-to-table restaurants, health and wellness fairs and conferences, farms, farmers markets, and much, much more. Our goal is to share the works of local artisans and healing arts industry entrepreneurs with others through our developing online educational show called "Freeway Foodies". We have "Foodie Friends" all over the USA and we hope to interview as many as we can along the way. I am professional singer and voice-over artist, as well as a nutrition teacher for a distance learning nutrition program, so my jobs give me the freedom to travel anywhere - as long as I have Internet and cell phone connection. I just LOVE the concepts and ideas behind Boondockers Welcome and we (me and the fur babies) hope to see you real soon! :-)
Nutrition education and music are my passions, so I love cooking and singing for anyone who likes a good meal and some live, unplugged entertainment. I also have strong computer skills and I can show anyone how to design a simple website, work on the basics in QuickBooks. I am also a master at culturing/fermenting sauerkraut, yogurt, kefir, sour cream, water kefir, salsa, chutney and much, much more. I can even teach people how to make homemade, non-toxic hygiene and household products. non-toxic.

I am originally from a small town in Central Florida (Eustis), but I moved to NY City when I was 21 to pursue my singing career. I have lived in NYC, Staten Island, Queens, New Jersey, and now I am moving out of Long Island to become a full-time RVer after living here for 14 wonderful years. I am taking my singing, speaking, music, and teaching skills "on the road".
My rig is a fifth wheel/diesel truck combination. The fifth wheel's name is "Olive". She is a 2015 Heartland ElkRidge E22. She is a modest 26 feet, 6 inches long, 11 feet/10 inches high with just one slide out on the left side (driver's side). She also has her water and sewer hook-ups on the driver's side. She has only her factory decorations, nothing weird or wild. The truck's name is "Earl" and he's quite strong and handsome! He is a 2015 Dodge Ram 2500 with an 8 ft. bed. It is NOT a dually model - only 4 wheels total. Olive-n-Earl are both characters in the Freeway Foodies cast! :-)
